Phosphatidylcholine

A class with the general structure of a glycerol molecule esterified by two fatty acid molecules. They are the main structural component of all cell membranes in the form of a phospholipid bilayer. Relatively low phospholipid levels have been found in olive oil, which has been reported to range from 21 to 124 mg/kg. Their presence has been shown to effect the oxidative stability of olive oil.
