Chlorophyll a

A class of pigments which absorb light primary from the blue and red portions of the electromagnetic spectrum and hence appear green in colour. They play an important role in photosynthesis; the process by which plants convert light to energy. Chlorophylls are mainly concentrated in the skin of the olive and but decrease in concentration as the olive ripens (hence the colour of the olive changes from green to purple as it ripens).
